I am sure you have not heard about this dish!!! I found this unique starter @Khopoli in Maharashtra and fell in love instantly!!! Every bite feels deliciously crispy, spicy and juicy as well:-)

Ingredients:

  • mixed vegetables – 1cup [preferably all veggies to be long cut] , [ i used carrots,onions, capcisum, cauliflower,potato, paneer]
  • corn flour -1/4 cup
  • rice flour -1/4 cup
  • maida all purpose flour -2tbsp
  • baking soda – pinch
  • Palak gravy – 1/4 cup
  • salt
  • Black pepper powder – 1 tsp
  • oil for frying
  • spring onion green parts chopped – 1/4 cup
  • olive oil – 2tsp
  • green chilly source – 2 tsp
  • garlic chopped – 1 tsp
  • Green chilies – 2 ( finely chopped/ slit)
  • Tomato ketchup – 2 tsp
  • Green chili sauce- 1 tsp
  • Vinegar – 1/2 tsp
  • Dark soya sauce- 1 tsp

 

Steps:

  1. in a bowl add corn flour,rice flour ,maida,salt, pepper and pinch of baking soda and  add water. Make smooth light batter, then add all veggies
  2. Heat oil in deep frying pan …then add battered veggies
  3. Deep fry veggies until golden brown and crispy. Drain them on a paper towel.
  4. In a pan, heat 2 tbsp oil ..on low flame

  6. Then add chopped garlic , green chilies.saute for a minute
  7. Add all the sauces , vinegar
  8. Then add palak gravy and  fried veggies[dont add too much salt becoz in the sauces already have salt]
  9. Cook for minute then add spring onion greens
  10. (You can also make it without Palak gravy, which can be called as Veg chilly fry)
