Schezwan Paneer Frankie / Paneer Kathi Roll

Frankie is a famous street side food in Mumbai.. Enjoy this yet another variety of Franky for paneer lovers!

Ingrediants :

For making Filling

  • Paneer – 1 cup (cut into small cubes)
  • Capsicum – 1
  • Onion – 1 big
  • Tomatoes -1 big
  • Spring onions – 1/4 cup
  • Garlic – 1 tbsp
  • Chili powder – 1/2 tsp (optional)
  • Schezwan sauce – 2 tbsp
  • Red chili sauce – 1 tbsp
  • Tomato sauce – 1/2 tbsp
  • Chili sauce – 1/2 tbsp or more
  • Black pepper powder – 1/8 tsp
  • Oil – 2 tsp
  • Cumin seeds -1/2 tsp
  • Salt – as per taste

For making frankie Wrap :

  • Maida / All purpose flour – 1 cup
  • Oil – 2 tbsp
  • Salt to taste
  • Water for making dough
  • Dusting flour

Assemble the frankie:

  • Coriander – 1/8 cup
  • Sliced jalapeños – 2 tbsp
  • Onions – 1/8 cup

Steps:

For making Filling:

  1. Heat 2 tsp oil in a pan
  2. Add cumin seeds
  3. Add chopped garlic and sauté for a min
  4. Add onions, capsicum and tomatoes quick saute. (Note:do not overcook, vegetables need to be crispy.)
  5. Add Schezwan sauce, tomato sauce, chili sauce and chili powder (optional)
  6. FRANKIE 4
  7. Mix very well and turn off the flame
  8. Add paneer cubes, mix well and cook for 3,4 mins
  9. Add some spring onions
  10. Filling is ready

 

For making frankie Wrap :

  1. Add 2 tbsp oil and 1/2 tsp salt into maida
  2. Knead the dough by adding water
  3. Cover with damp towel and keep aside for 15 min
  4. Knead the dough again make it into a soft dough
  5. Also use some more oil to make it soft and pliable.
  6. Divide the dough and the stuffing into 6 equal portions
  7. Dust the dough ball with some dry maida flour.
  8. Roll out each part into very thin wrap
  9. Heat oil on a tava and cook each roti lightly on a low flame. Do not cook completely yet and make sure you keep aside half cooked wrap

 

Assemble the frankie:

  1. Heat ½ tsp oil on a Tava and cook the half cooked warp on a medium flame, till both sides turn to light brown.
  2. Without wasting time, sprinkle some onions, coriander and jalapenos
  3. Spread 1 portion of the stuffing at the middle line of the circle
  4. Add some grated cheese
  5. Wrap the stuffing by pulling two sides
  6. Serve hot
