Palak Paneer / How to make Palak Paneer?

Palak paneer is arguably one of the most served vegetarian gravies around the world! Though, it’s an evergreen dish, the creamy palak can still satisfy many!!

Ingredients:

  • Bunches of spinach – 3 or 1 and 1/2 cup puree
  • Onion – 1
  • Tomatoes (boiled & made into puree) – 2
  • Ginger – 1 inch
  • Cashew nuts – 7-8 pcs
  • Paneer cubes – 1/2 cup
  • Garlic cloves – 2 big
  • Green chillies – 4,5
  • Garam masala – 1 tsp
  • Dry fenugreek leaves / Kasuri methi – 2 tsp
  • Curd – 2 tbsp
  • Salt
  • Cumin seeds – 1tsp
  • Unsalted butter – 1 tbsp
  • A pinch of asafoetida/hing
  • Turmeric powder – 1/4 tsp
  • Red chili powder – 1/2 tsp 9  [optional]
  • Cream  – 1tbsp [optional]

Steps:

  1. Boil 5 cups of water on medium heat, add salt and spinach leaves. Let it cook exactly for 2, 3 minutes.
  2. Strain the spinach leaves.
  3. Immediately add the spinach leaves in bowl containing ice cold water [this step helps preservation of the green color]
  4. Add the spinach in a blender and make spinach puree, without adding any water. Keep aside
  5. Add onions, cashew nut, green chili, ginger, garlic in blender, blend it in to smooth gravy
  6. Heat butter in a pan
  7. Once the butter melts, add cumin seeds. Let them sizzle.
  8. Add the onion paste in to the pan and cook it until its color changes slightly.
  9. Add the tomato puree and cook for about 3-4 minutes. (Wait until you see butter releasing from the sides of the mixture)
  10. Then add the turmeric powder, red chili powder and asafoetida/hing
  11. Add curd and cook for about 2 minutes
  12. Then add the palak puree and cook for 2 minutes
  13. Add little water and keep stirring
  14. Add garam masala powder and salt. Do not cover the pan with a lid, so that spinach cooks well.
  15. Add the paneer cubes and saute gently on a low flame till the paneer cubes become soft and cook it for 1 to 2 minutes.
  16. Finally add cream and kauri methi. Stir gently again so that the cream mixes into the gravy uniformly Switch off the flame.
  17. The delicious palak paneer is ready

  19. Serve the palak paneer with Hot Roti, Naan or Jeera rice.
