Khaman Dhokla / How to make Khaman Dhokla

Dhokla is soft & spongy and can be made very quickly. It’s a popular street side food in Gujarat. It serves as a side dish that can go with any meal.

Preparation Time: 25 minutes
Cooking Time:  30 minutes
Complexity : Very Easy


  • Gram flour – 2 Cups
  • Fruit salt / Eno – 1 sachet or 1 and 1/2 tsp
  • Ginger chilly paste – 2 tsp
  • Citric acid / Nimbu satva – 3/4 tsp
  • Salt to taste
  • Sugar- 3 tsp
  • Haldi
  • Luekwarm water – 1 and 1/2 cups
  • Oil – 1 tbsp
  • For tempering:
  • Oil – 1 tsp
  • Curry leaves
  • Mustard Seeds – 1 tbsp
  • Dry Chillies – 2
  • Asafoetida (hing) 1/4 tsp
  • Water 1/2 cup
  • Grated coconut 1/4 cup
  • Coriander leaves


  1. Grease a steamer pan with oil.
  2. Take 2 cups gram flour in a mixing bowl
  3. Add sugar, citric acid and the lukewarm water.
  4. Stir to a smooth thick batter without any lumps.
  6. Let the batter soak for at least 15-20 minutes.
  7. Add water In pressure cooker and place the stand inside it and bring it to boil  
  8. Add the turmeric powder, salt, ginger chilli paste and little oil to the batter and mix well
  9. Reduce the flame
  10. Add Eno in to the batter and whisk it quickly.
  11. Pour the batter in the steamer pan placed inside the pot and cover the pot with a lid. and remove the whistle from the lid
  12. Let it steam on a high flame for 25 minutes.
  13. to check the doneness, insert a toothpick and if it comes out clean, the dhokla is cooked.
  14. If the toothpick has the batter on it, then you need to steam for some more time.
  15. Allow Dhokla to cool
  16. Separate the dhokla from the steamer pan by using a knife.
  17. Heat the oil in a pan
  18. Add mustard seeds and allow them to crackle.
  19. Add curry leaves, dry red chili, asafoetida and 1/2 cup of water.
  20. Let the water boil for one minute.
  21. Then pour this tempering mixture evenly on the khaman dhokla.
  22. Garnish with chopped coriander leaves and grated coconut
  23. Sprinkle same chat masala
  24. Cut the dhoklas into square shape
  25. Serve with Green chutney
