Green Thai Curry

Want a break from regular Indian food?? Bring Thailand home with this world famous curry.!!..  Fragrance is quite different and lot of Indian people love this uniquely spiced coconut gravy!!

Curry Paste

Ingredients:

  • Basil leaves – 1/2 cup
  • Coriander leaves – 1/4 cup
  • Ginger or galangal chopped – 1 inch
  • Lemongrass – 1 stick  (  if you don’t have use zest of one lemon)
  • Lemon juice – 1 tbsp
  • Green chillies – 3-4S
  • Cumin powder – 1 tsp
  • Coriander powder – 1 tsp
  • Spring onions both white and green part – 1/4 cup or use normal onions – 1
  • Oil – 1 tbsp

Steps: 

  1. Grind all above ingredients with 1/4 cup water
  2. Make smooth paste
  3. Now curry paste is ready

Curry

Ingredients:

  • Veggies approx – 2 cup (I have used carrots , bell peppers[ yellow ,red, green], onions, egg plant, broccoli, cauliflower )
  • Tofu  – 4,5 cubes
  • Garlic cloves grated – 3
  • Oil – 2 tbsp
  • Cumin seed – 1 tsp
  • Soy sauce – 2 tsp
  • Coconut milk – 1 can
  • Water
  • Salt to taste
  • Basil leaves roughly torn – 4

Steps:

  1. Heat a pan add oil, add cumin seed and grated garlic. Saute for 1 minute
  2. Add all veggies and saute for 1 minute
  3. Add curry paste, soy sauce, saute for a minute
  4. Add coconut milk and mix well. Add salt .
  5. Add water if u need
  6. Cook curry on low to medium flame
  7. Add tofu
  8. Let the curry cook for 1 more minute
  9. Switch off the flame and add torn basil leaves
  10. Serve with Thai steamed rice.
