Mughlai Paratha

I am thinking of launching a Franchise with this unique dish:-)!! You can call this “Indian Chat Pizza”!! If there is a way to forget counting while eating then please let my husband know!!! This is one of the dishes where his counting stops and stomach speaks!!

Preparation Time:  15 minutes
Cooking Time: 20 minutes

  • Boiled potato – 4
  • Maida – 1 cup
  • Gram flour [besan] – 1 cup
  • Sev – 1 cup
  • Chopped onion – 1/2 cup
  • Chopped coriander – 1/4 cup
  • Green chili paste – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Ginger garlic paste – 1 tsp
  • Chopped Tomato – 2 [ remove seeds]
  • Green chili – 4
  • Garlic – 2
  • Cumin seed – 2 tsp
  • Red chili powder -1 tsp
  • Oil
  • Tomato sauce / chili sauce – 1/4 cup
  • Salt

How to make dough:

  1. Take a bowl add maida,1 tbsp oil, salt
  3. And mix with water make medium softy dough, cover the dough using plastic wrap. Keep aside
  4. In a mixing bowl, mix gram flour [besan], salt, red chili powder, cumin seeds,1/4 tsp cumin powder, 1/4 tsp garam masala with little water to make a batter.  It should be medium thick

For chutney: 

  1. In a blender pot add chopped tomatoes, cumin seeds, garlic, green chili, coriander leaves.
  2. Blend it without water. Keep aside

Potato Subji :

  1. In a mixing bowl, add mashed potatoes, turmeric powder, green chili paste, garlic ginger paste and mix well
  2. In a pan add 2 tsp oil and season it with mustard, cumin seeds and asafoetida
  3. Then add mashed potatoes mixture, mix well and cook it for 5 min . Keep aside

Mughalai Paratha:

  1. Knead dough for 2 mins and make 8 to 9 equal sized balls and set aside.
  2. Take a dough ball, flatten it with your finger tips, using a rolling pin, roll out the dough to form a circle, like chapatis
  3. Heat Tava on medium heat. Once heated, put the rolled dough on it. Cook for 1 min,
  4. Flip it to the other side and cook for few seconds. Please note that second side should be less cooked than first side.
  5. First side : refer below image
  6. Second side : refer below image (less cooked)
  7. Apply potato subji on first side [ cooked side]
  8. Heat tava on medium heat. Once heated, put the above paratha
  9. Then add 2 tbsp besan batter on potato subji and spread it nicely
  10. Flip it carefully …
  11. Sprinkle some oil around the paratha and cook for 2 minutes. Put this paratha in a serving plate
  12. Spread tomato chutney [ depend upon your test. i put 1 tbsp]
  13. Then add 2 tsp tomato sauce or chili sauce, spread it nicely (I used chili sauce as I don’t like sweet taste)
  14. Then garnish with chopped onions, sev, chopped coriander. sprinkle same chat masala, serve hot
  15. Cut in to 4 pieces using pizza cutter and serve hot (Just like pizza, you need to eat this when paratha is hot)
