Subz Shahi Palak

This is a find from one of the five star restaurants in Singapore!!! I doubt you will find recipe easily because this is a Chef’s Special Recipe:-) With instant appreciation from my husband, my curious mind was motivated to make this dish:-) The taste is so amazing that I was tempted to eat this magical palak, alone without any roti!!!! With just beans, carrots and spinach, its surprisingly tasty – A nature’s gift.. Palak… you beauty!!!!!

Preparation Time:  5 minutes
Cooking Time: 15 minutes
Complexity: Very Easy


Ingredients:

  • Carrot -1
  • Beans – 10
  • Spinach / palak chopped – 2 cup or more [Wash and chop palak roughly.]
  • Finely chopped Garlic – 6 or 1 tbsp
  • Turmeric powder – 1/2 tsp
  • Red chili powder – 1 and 1 /2  tsp
  • Garam masala – 1 tsp
  • Cumin powder – 1 tsp
  • Coriander powder 1 tsp
  • Posted peanut powder – 1 tbsp
  • Olive oil or use can use any oil – 1 tbsp
  • Salt – As needed
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Curry leaves – 1 spring
  • Asafetida – 1pinch
  • Fresh coriander leaves

Steps:

  1. Peel of the carrot skin and wash both carrot and beans. Chop them into Medium sized pieces as per your preference.
  2. Heat a pan, add oil and temper with mustard, cumins, asafetida, curry leaves
  3. Add finely chopped Garlic fry for a minute. Add the chopped vegetables, 2 for a minutes in medium flame
  4. Then add red chili powder, garam masala, cumins powder, coriander powder, turmeric and salt.
  5. Add chopped palak and cook until the water is evaporated [ spinach leaves water ]
  6. Refer below images to get the right texture
  7. Then add fresh chopped coriander leaves
  8. Serve hot with chapati or paratha
