Spinach Corn Curry

It’s quite common to make Palak Paneer and for those “Palak lovers” who dont like “paneer” this dish will certainly please you. Spinach Corn Curry is a healthier option and it’s really a perfect combination It’s one of those dishes which you feel is never enough. My husband can certainly eat this vegetable alone, after finishing all rotis:-)

Ingredients:

  • Spinach – 2 to 2.5 cups puree /1 bunch
  • Corn kernels [ boiled ] – 1 cups
  • Cumin seeds – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Red chili powder – 1 tsp
  • a pinch of asafetida
  • Curry leaves – 1 tbsp
  • Cumin powder – 1/2 tsp
  • Coriander powder – 1/2 tsp
  • Garam masala powder – 1 tsp
  • Curd – 1 tbsp
  • Cream -¼ cup
  • 1/2 to 1 cup water
  • Oil, butter, desk ghee  ( i used Desi ghee )
  • Onion,  Finely chopped – 1 medium sized
  • Tomato, Finely chopped – 1 medium sized
  • Ginger roughly chopped – 1 inch
  • Garlic cloves, paste – 4 ,5
  • Green chilies, chopped – 2,3
  • Capsicum finely chopped – 2 tbsp
  • Dry masala [ 2 cloves, 2 bay leaves, 1 dry red chili, 2 cardamam ]

 

Steps: 

  1. Wash palak and add in boiling water for 2 mins. Wait until it becomes dark colored.
  2. Drain and quickly pour ice water over the spinach. keep for 2-3 minutes.
  3. Drain palak and add green chili n ginger
  4. Make a puree of it in a blender, without adding water
  5. In a pan, add ghee, curry leaves,asafetida, mustard seed and cumin seeds. when they crackle add dry masala
  6. Add onions and garlic paste,sauté till the onions become transparent
  7. Then add capsicum and saute for 1minute
  8. Then add chopped tomatoes,sauté on a medium flame for few seconds.
  9. Add the turmeric powder, coriander-cumin powder, garam masala,chili powder,mix well and cook on a medium flame for 1 minute.
  10. Add above spinach purée, mix well and cook on a medium flame for 2 more minutes.
  11. Add the salt and curd and cream, mix well and cook for a 2 mins.
  12. Add the sweet corn kernels, mix well and cook for 1 minute.
